Jobs Status in Canada

• We're an Asian couple currently working in Dubai, UAE with high positions in an airline company and the oil and gas sector. we can say that we are getting good salaries, and can maintain a luxurious lifestyle despite the high cost of living in this country.
  We're planning to migrate to Canada, but a lot of people are telling us that professionals who are having degrees and high positions from Asian & Arab countries have downgraded jobs once they get to Canada, like engineers from Asia who become butchers or bakers once they get to Canada. How true is this?
