work visa in uae

• I'm a EU pass holder (Irish). Many years ago, for personal reasons I decided to change my name, as Irish law allows Irish citizens to do. I'm a senior architect - I got my degree before name change. I've been told in order to get a job and respective work visa I need among other documents to submit my degree... legalized by uae consulate in Dublin, etc. Problem is I can't produce such a document because of name change. I worked as architect, builder and developer for many years around the world without any need of producing my degree, my reputation and experience being sufficient... I can produce many witness declarations and company documents attesting my professionalism, but the degree...
  Is there another issue, like affidavit or similar?
