There are plenty of opportunities to volunteer in Ecuador. Some companies will offer an ‘experience’ package for volunteering on certain projects. They’re run to make a profit and charge anywhere from $300 to $1000 per month, but you can almost go for free if you know where to look. Just remember that nearly every volunteer scheme will require you to at least contribute something for your bed and board, plus a few other expenses. You’re also likely to have to pay for your own flights.
There are loads of options out there - you can do everything from organic farming to website design - so choosing a project can be difficult. Ultimately, you won’t know whether something’s really for you until you get there. The best thing to do is use online forums or blogs where people speak about the positives and negatives of their experience. Naturally, you should take these with a pinch of salt - just because someone had a bad time on a volunteering project doesn’t mean you will.
If you want to look at a few projects before committing, as well as keep costs down, you might want to think about making your way to Ecuador independently and checking out a few places for yourself before deciding on the one for you. Quito is a good place to ask around - the South American Explorers Club lists opportunities and often needs volunteers for its own clubhouse.

Merazonia - wildlife rescue organization based in Mera. They charge $130 per week to volunteers which includes food and accommodation.
